Chicken Soup with Dumplings

Ingredients:

1 tbsp olive oil 1 onion, diced 3 carrots, peeled and chopped 3 celery stalks, chopped 6 cups chicken stock or broth 1 lb chicken breasts, cut into small pieces 2 cups frozen peas 3-4 dumplings (recipe follows)

Dumplings:  

1 cup all-purpose flour 2 tsp baking powder pinch of salt ¼ cup butter, melted ¾ cup milk

Instructions:

In a large pot or Dutch oven over medium heat, heat the oil until shimmering. Add the onion, carrots, celery, and chicken stock or broth. Bring to a simmer and cook for 10 minutes.    Add the chicken breasts and continue cooking until cooked through, about 5 minutes. Stir in the frozen peas and dumplings (see recipe below). Cook until the dumplings are cooked through, about 10 minutes. Serve hot!  

Dumplings: In a medium bowl whisk together the flour, baking powder and salt. Stir in the melted butter and milk until just combined.

"Drop" 12 spoonfuls of batter onto a parchment lined baking sheet then freeze for at least 30 minutes before cooking (I usually make these ahead of time). To cook the dumplings: place them in a large pot of boiling water over high heat (you may need to do this in batches) cook for 10-12 minutes or until they float to the surface then remove with a slotted spoon
